3 minute Peanut Butter Rice Crispy Treats!

Honestly - is there anything better than Chocolate and Peanut Butter! 
I mean, the two complete my life!
I about die when I eye those gooey chocolate rice bars on pinterest. Amazing!
 I'm sure, but I would definitely not be able to eat just one!

So to the kitchen I went! The PERFECT little treat for kids
 (or afternoons when I need a mommy "pick-me-up") 

I like to store them in my freezer, so I have to wait for them to thaw and it controls portion size!
But with these little babies, you won't feel as guilty if indulging wins!


 Wrapped in packages and Tied with bows - anything looks cuter!


1/3 c honey
1/4 c crunchy peanut butter (all natural!)
1/4 c raw cacao powder or cocoa powder
1/2 tsp salt if pb is unsalted, or you like salt!
1/2 tsp vanilla
3/4 c puffed brown rice cereal
1/2 c regular oats
Mini Chocolate Chips or Unsweetened Carob chips (for a lower sugar option)

(ps. I like lots of salt! Salt and sweet are for me! 
So lessen the salt if you want, but if you like salt - go with kosher salt! Its the best!)

Warm the Honey and Peanut Butter a little in microwave safe dish. 
Stir and add the rest of ingredients.
  Stir quickly and let cool a tiny bit before adding chips.
Roll into balls with hands and place in fridge until hardened

Naturally sweetened/grain free chocolate chip cookies!

Nothing like a yummy, Naturally Sweetened Chocolate Chip cookie!
Not to mention, grain free and full of protein and fiber!

I'm really into Date Sugar right now! 
Been having fun finding ways to use it!


Ingredients:

1 can garbanzo beans (drained and rinsed)
1/2 cup quick oats (or certified-gf quick oats)
1/4 cup unsweetened applesauce
1 tbsp oil (canola, veg, or coconut)
1 tsp pure vanilla extract
1/4 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 cup Date Sugar, or soaked dates blended
3/4 cup unsweetened carob chips or mini Choco chips
1/4 c milk, only add if batter seems dry

Put all ingredients in food processor and pulse until blended well. 
Add extra choco chips at the end if you want a little crunch.

Place into greased muffin tins and bake at 350 for about 7-9 minutes.

Naturally Sweetened Banana Bread


You will not be disappointed  This is very moist and no one would guess there is 
no REFINED SUGAR OR HONEY!! 
Its all natural which makes me happy.
I was even more happy that my husband LOVED it - he's my toughest critic!



Or make muffins for a HEALTHY breakfast on the go!
 I 've also thrown them into lunch boxes

1 1/4 cup dried dates (about 7 ounces), pitted and soaked in about 1 cup milk
2 Tablespoons coconut oil melted
1 large eggs, at room temperature
1flax egg (1 Tbl of ground flaxseed mixed with 1/4 cup water. Let sit 10 minutes)

1/2 cup unsweetened applesauce or cinnamon applesauce
1 Tablespoon pure vanilla extract
2 cups white whole wheat flour
1/2 teaspoon fine grain sea salt
1 teaspoon aluminum-free baking soda
1/2 teaspoon aluminum-free baking powder
1tsp cinnamon
3 large, ripe bananas, mashed
1/2 cup raw walnuts or pecans, coarsely chopped
1/4 cup raisins , opt. 
  1. Preheat oven to 350 degrees.  Grease a 9 x 5 x 3 loaf pan. 
  2. Place the dates in a mixing bowl and cover with milk.  Let sit at least one hour (or overnight). Blend. Add to kitchen aid or mixer. 
  3. Turn the mixer on low speed and blend 
  4. Add the oil and beat until well blended.  Add the eggs ad flaxseed egg, beating well after each addition.  Add the vanilla extract and mix.
  5. In a medium bowl, combine the flour, baking soda, baking powder and salt.  Add to the oil-date mixture and mix until just combined.
  6. Fold in the mashed bananas and walnuts.
  7. Pour the mixture into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out barely clean.  Cool in the pan for 10 minutes.  Remove from the pan and cool on a rack. For muffins I only did about 20 minutes.
I store on counter for a couple days then into the fridge for about 3-5 days.

Banana Chocolate Chip Flax Muffins

I was so excited to try this recipe when I saw it! They just looked delectable! 
I made a few changes to cut sugar and fat, and ended up with a tasty, moist, fiber full, protein packed, perfect muffin! It's also GLUTEN FREE! Which means it will be easier for you to digest and easier on your stomach.

Ingredients:
1 C Ground Flaxseed
1 1/4 C Oat Flour (oats ground in blender)(GF if need be!)
1/2 scoop of any protein powder (optional)
1/4 C Sucanat
1 tsp Powdered Stevia
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Xanthum Gum
1 tsp Cinnamon
2 Ripe Bananas, mashed well
2 Eggs
1/4 C Cinnamon Applesauce Unsweetened
1/4 C Skim, 1%, or Almond Milk
1/2-1 C Dark Chocolate chips, or unsweetened carob chips (to lower sugar even more)

Whisk all dry ingredients in one bowl (except choco chips). And whisk all wet ingredients in separate bowl. Combine the two together and mix just until combined. Fold in Chocolate chips.
Bake at 325 for 25 minutes. LET COOL - they are pretty moist
Makes one dozen

6 Grams of protein per muffin!


Here's an even healthier/lower calorie version - for all you crazies out there! ;-)

Ingredients:
1/2 C Ground Flaxseed
1/2 C Wheat Germ
1/2 C Peanut Flour (my new fav ingredient!!- see below)
1/2 C Oat Flour
1/2 Scoop of Protein Powder
1 1/2 tsp Powdered Stevia
1/4 C Xylitol
1/2 tsp Salt
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Xanthum Gum
1 tsp Cinnamon
2 Ripe Bananas, mashed well
3 tsp Energy Egg Replacer (mixed with 4 Tbl water in a separate bowl)
1/4 C Canned pumpkin or Unsweetened Applesauce
1/4 Almond Milk
1/4 C Unsweetened Carob Chips, 1/4 C mini Chocolate chips/cacao Nibs
1/4 C Raisins

Place in Mini Muffin tins for  a quick pick me up snack! 
Bake 325 for 20 minutes. Makes 24.
Per Muffin: Calories- 71, Carbs - 11, Fat - 2, Protein - 3

Simple NO BAKE - Cookie Dough Bites!


Sunday is my day I allow myself to cheat! 
I believe there is nothing better than the taste of Cookie Dough! 
 Here's what I came up with.



Ingredients:
1/4 C Pecans
1/2 C Cashews
1/3 C Oats
1/8 tsp Salt (only if your nuts are unsalted!!!)
1 Tb Raw Honey or Pure Maple Syrup
1 tsp Vanilla
1/4 C Dark Chocolate Chips, or Mini Chocolate Chips

Put first four ingredients in food processor. Pulse until well combined and ground fine. 




Add honey and vanilla. Pulse until you get a dough like consistency. Fold in chocolate chips.


Store in between wax paper in the freezer for a quick grab and go treat! 
That is, only if you have leftovers!!

Homemade Wheat Thins

I was SOOO excited to find this recipe!! I have always loved wheat Thins, but stopped buying them, trying to rid myself of processed food! These are a GReaT replacement and taste very similar! I am going to keep experimenting to create a fat free and gluten free version. 
(I'll let you know!)

THese are WAY easier and more simple than my trusty Graham Crackers
so this might be my new go to for snacks!
Dip in Hummus, or Edamame Hummus or Guac!

No Sugar Added - Almond Quinoa Granola Bars

WOW! 
Talk about a power food bar! Quinoa is GREAT for you, just one 3.5 oz serving provides 12-15 g of protein! 
Inspiration taken from Anja's Food 4 Thought




1/4 C Uncooked Quinoa
1/4 C Ground Flax Seed
1/2 scoop of protein powder (optional)
1/2 tsp Sea Salt
1/4 Dried Dates (about 5)
1/3 C Dried Prunes (about 8)
1/4 C Raisins
3/4 C whatever nuts seeds you want (pumpkin, sunflower, almonds, walnuts, etc)
Banana sweetener (recipe below)
1 C Old Fashioned Rolled Oats (GF if needed)

Place above ingredients (except banana sweetener and oats) in food processor, pulse until combined well.

Banana Sweetener:
In small pot mash 2 VERY ripe bananas and 1/4 C Almond Butter. Cook over low heat until well combined. (not too long)

Add Banana mixture to nut mixture, and pulse until combined.
Add 1 C Old Fashioned Rolled Oats (gluten free optional) and pulse just barely until combined, don't over process.

Spread in bread pan lined with parchment and bake at 350 for about 25 minutes.
Let cool and slice into bars.

What is That? Edamame


Edamame is an ever growing popular health food item. GREAT as a snack!!! I buy the frozen bags at costco. Just pop them in your microwave, sprinkle with sea salt and enjoy without any guilt!

Just 3 1/2 oz of shelled edamame (the beans only) has 12 g Protein, 4 g Fiber, 145 mg calcium, 60 mg magnesium! (The 150 healthiest foods on earth)

Here is  an easy way to enjoy it!

Edamame Guac
My kids DEVOUR this snack! I love it. 
They are getting some great vitamins/fats/proteins in just one little snack! An energizing pick me up!


1 C Frozen Shelled Edamame - sit in a bowl of hot water until softened
1 Ripe Avocado
1 small clove garlic
handful fresh cilantro
1/3 Onion
Juice of 2 limes (I always start with one and taste test before adding more!)
Sea Salt and Pepper

Place in Food Processor and pulse until combined. You will probably need to add 2-4 Tbl of water to the mix to get the right consistency.

I also used it for my lunch. 

Use a whole grain Tortilla (I used Ezekiel sprouted wheat tortilla), spread with Edamame Guac, and fill with shredded carrots, sliced roasted red peppers (I buy these in water in a jar), sprouts, Spinach, and anything else you would like!
YUM!

Orange Pistachio Granola Bars -no sugar or oil added-

HAPPY VALENTINES DAY - 

I love to experiment. This week I have been trying some new RAW recipes. 
(You can learn about my week on raw HERE. )

She includes great instructions and many amazing recipes!!

The kids loved their 'Valentine' Granola Bar Snack


Ingredients 
1 1/2 cup pitted Medjool dates (14-15 total) 
 juice and zest of 2 oranges 
3/4 cup cashews (optional) 
2.5 cups rolled oats 
1/3-1/2 cup shelled pistachios 
3/4 cup pumpkin seeds 
3/4 cup sunflower seeds 
I added 1/2 tsp Sea Salt (I LOVE that sweet salty taste!)
1 cup raisins 

My Optional Additions: Shredded coconut, 1 tsp Vanilla, mini chocolate chips or cacao nibs

Directions:
1. Using a food processor, mix ingredients 1-3 until (dates, juice of oranges with zest and cashews) until almost smooth, but can leave slightly chunky 
2. Add rolled oats and pulse 10 times, stop, scrape mixture off sides, and repeat process three more times 
3. Add remaining ingredients except raisins and pulse 10-15 times 
4. Remove, place in a bowl, add raisins and thoroughly mix by hand 



Use any shape of cookie cutter you want and press firmly. About 1/4-1/2 inch thick. 
Place in dehydrator for about 8 hours or bake at 350 for about 15 minutes. 
Check often so they don't brown. They should be pretty crunchy!

Banana Nut Muffins

Yum! After going SOO long without bread, I was just Dying for something like these!!
Recipe altered from "Original Fast Food, by Simmons."



I replaced the Whole Wheat Flour with 1 C brown rice Flour (I just grind brown rice in my vitamix) and 1 C Spelt Flour (you can buy this at a whole foods, etc.)
Spelt isn't gluten free :( But it tastes like wheat and is A LOT easier on you digestive system than wheat flour is. It's also higher in protein and fiber! Whole Wheat is great, just try to replace it when you can with something that won't be so hard on your system.

1 Orange (or 2/3 C fresh orange juice)
2 Ripe Bananas
3 Tbs Lemon Juice
1/3 C Honey
1/2 C Applesauce
1/2 tsp Vanilla (optional)
1/2 C Chopped Walnuts!! (crucial)
1 C Brown Rice Flour (or white whole wheat flour)
1 C Spelt Flour (or 1 cup white whole wheat flour )
1 tsp Baking Powder
1/2 tsp Salt
1 tsp Baking Soda
1 tsp Allspice Powder
1 Tbs Ground Flaxseed
1/2 C Raisins (optional)

Peel orange. Place in blender with about 1/4 C Water. Put through a mesh strainer into a bowl, taking out the pulp. THen add the bananas, lemon juice, honey and applesauce to blender (or processor). Blend until pureed. Add to orange juice in the bowl. Add the rest of the ingredients to bowl and stir until just combined. Fill muffin tins and bake for 20-25 minutes at 350. They don't puff up a lot, because of the flour, but the family LOVED them!!!!!

Cashew Cream - Non-Dairy Dessert Topping!

I have been DYING to try a Cashew Creme. 
It is VERY popular in the vegan world, but don't let that scare you! 
Be brave and try something new that is dairy free (making it less saturated fat and easier to digest) 
It was so good, with the perfect amount of sweetness.

We topped our bread pudding with it (and of course I didn't get a pic! ARGH!) 
My kids ate it this morning sprinkled with cinnamon as a fruit dip! YUM!

I have only begun the experimenting! I am sure there are so many fun variations - so stay tuned! :)
This simple delight is topped with Buckwheat Crispies. My new Fav as well!
More to come on those!!

1 C Cashews
3-4 Pitted Dates
1 tsp Vanilla
1 tsp Sugar or honey (totally optional)

1) Soak the cashews and dates either overnight or at least 20 minutes in water. (Just barely cover)
2) Drain half of the water off of the cashews and place in blender. Place dates in blender with their soaking water. Add vanilla and blend for 2-3 minutes. It gets thicker the more you blend. If you place in fridge for a couple hours it thickens even more! Stir in sugar or honey if you would like it a little sweeter. Or try to just enjoy sprinkled with Cinnamon!

More Cookie Bites? - Peanut Butter Sweets

I know - I'm a little obsessed with these! I love just a tiny little bite for a quick pick me up and 
sugar craving smasher!


Well, I found another one I LOVE
It really feels like a boost of energy and I don't feel guilty eating them!
(they would also be a PERFECT after school snack!)
No Flour, No Sugar, No Bake! (raw)

1 Medium RIPE Banana
2 Cups Old Fashioned Oatmeal
1 C Almond Butter and/or All Natural Peanut Butter (I did half Sunbutter and 1/2 Almond Butter)
1/4 Honey (raw if possible)
1 tsp Vanilla
1 tsp Ground Cinnamon
1/4 C Raisins (optional) you could do mini choco chips too!

Put everything into a food processor and blend until smooth. Stir in raisins. Roll into balls (with wet hands) and place on plate lined with wax paper. Put in freezer to set.

Cocoa Drops

When trying to break away from sugar (which happens often!) I make little wholesome treats that will satisfy the craving. These little chocolate hugs where perfect!
They are no-bake and FAST! 
Packed with protein and fiber!
NO REFINED SUGAR OR FLOUR! I love that - that's usually always my goal! :)
side note: My Kids LOVED these!

Ingredients:
1/2 C Walnuts or Pecans
2 Tbs Whole Flaxseeds (you can use ground too!)
2 Tbls unsweetened Coconut
1 C Oats (gluten free if need be)
1/ 2 C Medjool pitted dates
1/2 C raisins
4 Tbs Cocoa powder
1 tsp Honey
1 tsp Cinnamon
pinch salt
Mini Chocolate Chips or cocoa nibs (optional)

1) Place dates and raisins in bowl and cover with water. Let sit atleast 10 minutes
2) Combine nuts, flaxseed, coconut, and oats in food processor. Process until combined.
3) Add the drained dates and raisins, cocoa powder, honey, cinnamon, and salt. Mix until all ingredients are blended.
4) Move to bowl and stir in chocolate chips if desired. Use a cookie scoop or Tablespoon to measure out balls and roll with hands. Dust LIGHTLY with cocoa powder if desired.

Graham Crackers!

To be honest, this is a little over the top for me - in terms of a lot of work. But it was way worth it! I might double the batch next time and keep them in the freezer for a future snack. 
I love giving my kids something where I know the ingredients are pure and nothing processed. 
-And I lowered the sugar quite a bit, but they're still tasty enough for the Hubs :)

I've been on a quest for awhile to make some homemade grahams. 
Ever since we were planning to enjoy these:

Going to buy Graham Crackers I found this ingredient list on the all:

Ingredients: UNBLEACHED ENRICHED FLOUR (WHEAT FLOUR, NIACIN, REDUCED IRON, THIAMINE MONONITRATE {VITAMIN B1}, RIBOFLAVIN {VITAMIN B2}, FOLIC ACID), GRAHAM FLOUR (WHOLE GRAIN WHEAT FLOUR), SUGAR, SOYBEAN OIL AND/OR PARTIALLY HYDROGENATED COTTONSEED OIL, HONEY, LEAVENING (BAKING SODA AND/OR CALCIUM PHOSPHATE), SALT, ARTIFICIAL FLAVOR, SOY LECITHIN, CORNSTARCH. CONTAINS: WHEAT, SOY.

First of all why so many crazy ingredients? I hate that! And second of all, do you see it?? Right there in the middle:
SOYBEAN OIL AND/OR PARTIALLY HYDROGENATED COTTONSEED OIL, HONEY, LEAVENING (BAKING SODA AND/OR CALCIUM PHOSPHATE)

That's what you want to avoid ladies and Gents - That's the same for Trans Fat - the website even says that they are following FDA's rules for trans fats letting less than .5 g to actually say 0 on the nutrition label! 
Just read the ingredient list and DON'T EAT IT! PLEASE!
-I know you think I've gone pretty crazy, and that could be true, but why put something into our bodies, or our kids for that matter, that just doesn't belong?
So along came the quest for my own Grahams, and I FINALLY got to it! 
They are delish and good for you (well a lot better I should say!)

Ingredients:

1 C While Whole Wheat Flour
1 C All Purpose
1 C Gluten Free Blend (or just do 2 C Wheat Flour!)
1/2 C Dark Brown Sugar
1 tsp Baking Soda
3/4 tsp Kosher Salt
1/4 C Blackstrapp Molasses (or just regular molasses - but Blackstrap has AMAZING Health benefits!)
2 Tbl of Earth Balance or Smart Balance Buttery spread
5 Tbl of Canned Pumpkin
1/3 C Honey
5 Tbl of Almond Milk (or any milk)
2 Tbl Vanilla 

Directions:
 - Combine Flours, Baking Soda, Salt, and Brown Sugar. You need to use a hand mixer with a wider whisk. Or a large food processor. This helps combine the ingredients well. Slowly add the butter and pumpkin and pulse the blender and then blend on slow until combined. Add Molasses.


 In a small bowl whisk milk, vanilla, and honey. 
Slowly pulse into dough and mix until WELL combined.


Divide dough, wrap in plastic, and place in fridge for about 2 hours or freezer for 1/2 hour. Place dough on Flour lined cookie sheet or Silpat. Cover with plastic wrap and roll out with dough roller. 
(the dough is sticky - plastic wrap HELPS!) 


Use a pastry roll or pizza cutter to score lines in dough. I used the back of a bamboo stick to poke holes. Mix 1 tsp cinnamon and 1 1/2 Tbl of sugar and sprinkle over dough. 
(this is optional, I made one batch with and one batch without)

Cook at 350 for 15-18 minutes. Let cool for a few minutes and move to cooling rack. You may need a knife to cut or break edges evenly. Store in airtight container or freeze. 

Enjoy as a cracker, dip in Peanut Butter, or go make those SMORES!

Cranberry Energy Bars

Raw Diet - Day 5

So this is probably my last day. I really dont want to stop. I feel great, but it just takes so much time to make things that actually taste good, and my family isn't huge fans of what I have been cooking. 
But I am definitely going to try and keep my diet as raw as possible! 
Why not?
Today while walking through the mall they were handing out cookie samples, I didn't even really care! Crazy huh? THat is so UNUSUAL for me! Sugar cravings are something I always struggle with, but I was fine. I think having a few raw cacao cookies at home eased my mind. I can still have a little sweet, just not the refined kind. :)


Breakfast: Chocolate Peanut Butter Smoothie 
(the best one yet!)


4-5 large swiss chard leaves (or 2 c spinach) 
Heaping Tbl of Peanut/Almond Butter
1/2-1 chopped banana (frozen if possible!!)
Handful of Frozen Blueberries
1/2 scoop of Lifetime Basics Chocolate Plant Protein (or cocoa powder)
1-2 Dates
1/2 C Almond Milk


Lunch: Spa Salad
Torn Red Leaf Lettuce
1/2 C Cooked shelled Edamame (ya- not raw- oh well)
1/2 C chopped Red Pepper
1 Green Apple Diced
1/2 C chopped Avocado
Handful of Sprouts of your choice
Spritz of Balsamic Vinegar and Salt and Pepper
Top with Honey and Nuts Munchies Mix (recipe below)

Honey and Nuts Munchie Mix (also a great snack!)
(taken from Rawsome Recipes)

1 C Almonds soaked overnight
1/2 C Macadamia Nuts, Pecans, and walnuts soaked for 2 hours
1/4 C Pumpkin seeds, soaked 1 hour
1 1/2 T Coconut Oil
2 T Raw Honey
1 1/2 tsp Cinnamon
1 tsp Salt

- If you prefer. Chop all nuts. I like smaller pieces and wish I had chopped all of mine. Pat nuts dry with towel. Mix Oil, honey, salt, and Cinnamon in bowl. You may need to microwave or put it over low heat on stove to blend well. Pour over nuts and stir. Dehydrate for 12-18 hours. (I ended up putting them in my oven at 200 degrees for an hour. Pull them out and let them cool, they will crisp up.
-My kids loved snacking on this!

Snack: Zucchini Carrot Bread Sandwich

I didn't LOVE the bread. It needed more flavor. But it did have a slight wheat taste from the sprouted wheat (major health benefits by the way!). I like that. When I dipped it in hummus or made a little sandwich from it - I liked it. COnsidering the high protein content from the sprouted wheat - I like this for a 'pick me up' kinda snack!

Hahha - Ya we went out. I actually brought leftover Felafel's with me and ordered a greek salad. I just threw the felafel's on top and it was PERFECT!

Raw Diet - Day 3

It's still going good. My energy is still good. I don't have that afternoon slump like I usually get. I feel really good! I was slightly more hungry today, Probably because I had an intense workout this morning? And, I do miss bread - today was the first day I was missing real food!

Breakfast: Pineapple Green Smoothie

2 C Spinach (or Kale)
1 C Frozen Pineapple
1/2 C Blueberries
1/2 scoop Lifes Basics Plant Protein (vanilla)
1/2 C Almond Milk (or any milk)
Optional: 1Tbl Wheat Grass Powder and 1 Tbl Spirulina

Mid Morning Snack: Left over Porridge and trail mix

Lunch: Left over Zuchinni Corn Cakes over Salad. With Ants on a log. :) And one cacao walnut cookie for dessert.

Snack: Trail Mix
Mix: 
Sunflower seeds (raw)
Pumpkin Seeds (raw)
Organic Raisins (regular and golden)
Cranberries
Almonds
cashews (raw)
(If you're not worried about 'raw' add some mini choco chips - this is a GREAT energy boosting snack!)

Dinner: Raw Mushroom Hamburgers.

Didn't love these. Kids hated them. :( I don't think I dehydrated them enough.
 My dehydrator is cheap and I am learning I probably need a nicer one that works a little faster.

 I had a BUSY BUSY day - obviously! 
DIdn't prepare a lot of new things and ate what leftovers I had in my fridge.

My FAVORITE Snack - Microwave Potato Chips

That's right, you read that right - Microwave!
I was ecsatic when I found this recipe! 
Its the perfect snack for those moments I want something evil, but don't want to open a whole bag of Oil and trans fat, if you know what I mean. :)
These are going to be the purest and least fat chip you can make and still ENJOY!
-OIL FREE-
Instructions:
1- Take one Russet Potato and slice VERY THIN - as thin as you can get. Try to keep them as even as possible, so you don't end up with some burn't ones.
2- Take the microwave plate out of your microwave. Cover with a piece of parchment paper.
3- Lay the sliced potato onto the sheet, evenly spaced. Sprinkle with desired seasonings. Salt, Garlic Powder, Chili Powder, you can try many different things!
4 - Cook 5 minutes. Let set in the microwave for 1 minute. Microwave again about 3-5 minutes. I watch until they begin to brown slightly. Right when you see that, turn it off! They will still cook slightly as you let them sit in the microwave one more minute. They should be crunchy!

Edamame Hummus - Snack Attack

If you know my son, you know he ALWAYS wants food.
It's hard to keep him fed and finding yummy,
healthy options for snacks gets hard and OLD!

I found a few things I LOVE this week!
Edamame Hummus and Potato Chips in 6 minutes!
No JOKE! (recipe for chips coming soon!)

Edamame Hummus and Pita Chips
Full of protein, and SO GOOD!
My Three year old DEVOURED it!
Ingredients:
2 C Frozen Edamame, cooked according to directions
1 C silken Tofu, drained
1/2 tsp salt, plus more for taste
pinch of white pepper
1 1/2 tsp ground cumin
3 cloves garlic minced
1/4 C Olive Oil
1/3 C Fresh Lemon Juice
Spiced Pita Chips (directions below)

Place all ingredients (except chips) into blender or food processor. Process until very smooth. Taste and adjust seasonings. Can refrigerate for up to three days. Serve with homemade pita chips.

Pita Chips
I just took whole wheat pita's and cut them into wedges. Spritzed them with my Olive Oil Spritzer (or you could use Pam) and then sprinkled them will a little cumin and garlic salt. Bake at 350 for about 10 minutes. Check for crispiness.
