If you know my son, you know he ALWAYS wants food.
It's hard to keep him fed and finding yummy,
healthy options for snacks gets hard and OLD!
I found a few things I LOVE this week!
Edamame Hummus and Potato Chips in 6 minutes!
No JOKE! (recipe for chips coming soon!)
Edamame Hummus and Pita Chips
Full of protein, and SO GOOD!
My Three year old DEVOURED it!
Ingredients:
2 C Frozen Edamame, cooked according to directions
1 C silken Tofu, drained
1/2 tsp salt, plus more for taste
pinch of white pepper
1 1/2 tsp ground cumin
3 cloves garlic minced
1/4 C Olive Oil
1/3 C Fresh Lemon Juice
Spiced Pita Chips (directions below)
Place all ingredients (except chips) into blender or food processor. Process until very smooth. Taste and adjust seasonings. Can refrigerate for up to three days. Serve with homemade pita chips.
Pita Chips
I just took whole wheat pita's and cut them into wedges. Spritzed them with my Olive Oil Spritzer (or you could use Pam) and then sprinkled them will a little cumin and garlic salt. Bake at 350 for about 10 minutes. Check for crispiness.
