Peanut Butter Chocolate Macadamia Ice-cream!

Dairy free and all Natural
I know! Crazy right? I thought the same thing. I have found my new love for the summer! Seriously - I consider making this EVERY night since we have met! It's amazing, delectable, and even the hubs said it was good and creamy. (that's big considering he is not on board with the health craze of late)

1. Start with two ripe Bananas. Slice up and freeze for about 2 hours.
Place in Food Processor, and pulse, scraping sides when needed.

 - Until you see this creamy dream. :)

2. Add: 1 Heaping Tbl of Peanut or Almond Butter, 1 Tbl Cocoa Powder, Handful of Macadamia nuts, 1/2 Tbl Honey, and 1/2 Tbl Raw Cacao Nibs or Chocolate chips (optional)

 3. Continue to pulse until all ingredients are incorporated.

Top with Shredded unsweetened Coconut or any topping of your choice!
 ENJOY!

Raw Diet - Day 4

Can you believe I'm still going?
To be honest the hardest part is all the prep. I'm running out of time in my day - tired of spending my whole day in the kitchen! But I seriously am scared to stop! I really do feel great! And have gone these 4 days without experiencing my afternoon slump and fatigue! I really have SO much more energy! I'm scared to stop this. But in all reality, it's so hard to keep up. I will probably go at least one more day, cause I have a few more recipes to share. :-)
But I definitely want to incorporate a lot more Raw in my life!

Breakfast: Vanilla Peach Smoothie
Ingredients:
2 C Kale
1 C Frozen Peach
Small Handful of frozen Cherries
1/2 C Almond Milk (or any milk)
2 Dates (for sweetness)
Optional: 1 Tbls Spirulina

Mid Morning Snack: Apple Raisin Cookies

Recipe adapted from ramazing.com
Ingredients:
1 C Oats
1 C Oat Flour (Oats ground in Blender)
1 C Almond Flour (ground in blender)
1 C Apple Puree (3 apples pureed in processor)
1/2 C Coconut Oil
1/4 C Raw Honey
1 T Cinnamon
1 C Raisins

Roll in balls and place on dehydrator for 5-7 hours.

Lunch: Salad
- Once again, didn't have a ton of time. Just threw some veggies together and topped with a little Annie's lite Ginger dress (not raw - but AMAZING!).
-One Banana and Almond Butter for dessert

Snack: Kale Corn Chips w/ Guac
picture from rawmazing.com

These weren't as amazing as expected.
The kale just overpowered it for me. But they tasted great with the guac!
You can find the recipe HERE

Dinner: Falafel's (raw)

Made with sprouted Garbanzo Beans (chickpeas). I was excited to try these, because for one, I LOVE falafel's  (You can see the ones I actually 'cooked' (haha) HERE), but sprouting is a HUGE health benefit! When you sprout beans or seeds the vitamins, minerals, and Protein increase, while the carbs and calories decrease! NO JOKE! Crazy huh?
I did slightly taste that 'sprouted' taste, but only every few bites. haha

I actually really liked them though! My fam tucked them in a pita with Tahini, cucumber, red onion, pickles, sprouts, and fresh mozzarella - my family LOVED it!
I just ate them on a salad with Annie's Green Goddess Dressing
(the best dressing in the entire world! - again, not raw, but oh well  - you can find it in my sidebar:))

You can find the recipe HERE.
I just added an extra Tbl of Soy Sauce and Extra tsp Cumin and some salt.

Dessert: Dairy and Sugar Free Chocolate Macadamia Ice-cream

SO GOOD it deserves its own post! Stay Tuned! :)

Raw Diet - Day 3

It's still going good. My energy is still good. I don't have that afternoon slump like I usually get. I feel really good! I was slightly more hungry today, Probably because I had an intense workout this morning? And, I do miss bread - today was the first day I was missing real food!

Breakfast: Pineapple Green Smoothie

2 C Spinach (or Kale)
1 C Frozen Pineapple
1/2 C Blueberries
1/2 scoop Lifes Basics Plant Protein (vanilla)
1/2 C Almond Milk (or any milk)
Optional: 1Tbl Wheat Grass Powder and 1 Tbl Spirulina

Mid Morning Snack: Left over Porridge and trail mix

Lunch: Left over Zuchinni Corn Cakes over Salad. With Ants on a log. :) And one cacao walnut cookie for dessert.

Snack: Trail Mix
Mix:
Sunflower seeds (raw)
Pumpkin Seeds (raw)
Organic Raisins (regular and golden)
Cranberries
Almonds
cashews (raw)
(If you're not worried about 'raw' add some mini choco chips - this is a GREAT energy boosting snack!)

Dinner: Raw Mushroom Hamburgers.
 Photo From Rawmazing.com

Didn't love these. Kids hated them. :( I don't think I dehydrated them enough.
My dehydrator is cheap and I am learning I probably need a nicer one that works a little faster.
You can find recipe HERE

Dessert: Fresh Pineapple

I had a BUSY BUSY day - obviously!
DIdn't prepare a lot of new things and ate what leftovers I had in my fridge.

Raw Diet - Day 2

I'm not very hungry. It kind of surprises me. I usually snack ALL DAY.  I think the amount of fat and protein I take in from nuts and good fats (olive oil and avocado) are keeping me satisfied a lot longer than usual! I spent all morning in the kitchen preparing food though. One annoying thing! I'm having a hard time resisting bites from my kiddo's food, but other than that. I'm satisfied. :)

Breakfast: Raw Oat Apple Porridge

Adapted from Rawsome Recipes (in my Amazon store!)
Ingredients:
1 C Steel Cut Oats
1/4 C Buckwheat Groats (bulk food section in health store)
2-3 Pitted Dates
1 Apple, cored and chopped
1/2 tsp Cinnamon
1/4 Scoop of Vanilla Protein powder (look below at first day to see what kind I love!)
Almond Milk 1/4-1/2 Cup

- Soak Oats and Groats all night. Rinse will. Puree in food processor with all other ingredients but apple. After completely pureed add apple and pulse until combined. Serve with fruit and/or nuts.

- I LOVED this!
I could eat this every day. I felt satisfied and full. My kids even loved it!
353 Calories. 3 g Fat, 11 g Protein! See  - It's still high in protein!!

Not as good as fresh. Not extremely satisfying. :(

Snacks:
Banana, Peach, and lots of Nut and Fruit Trial Mix

Dinner: Zucchini Carrot Cakes

These were easy to make, if you have time in the morning and ALL DAY! It's just a lot of prep. They dehydrate all day. But turn out yummy. Quite satisfying I must say. :) I enjoyed it on top of a salad with Tomato and Avocado. My kids ate them with a little spaghetti sauce.
Here they are in the Dehydrator.
Get the Recipe HERE

Dessert: Cacao Walnut Cookies
Picture from rawmazing.com

Raw Cacao Powder has some AMAZING health benefits.
Not to be confused with the cocoa powder you have in your pantry! But if that's all you have then use it! :)
The Recipe is altered from HERE

Ingredients:
1 C Almond Flour (almonds ground in blender)
1 C Oat Flour (Oats ground in blender)
1/2 C Ground Flaxseed
1/2 C Raw Cacao Powder
2 1/2 Tbl Olive Oil
2 1/2 Tbl Unsweetened Applesauce
1/3 C Water
2 Tbl Raw Honey
1-2 Dates chopped
1 Tbl Vanilla
2/3 C Chopped Walnuts

Blend Flours and Cacao Powder. Add everything, but walnuts, and pulse until well combined. Add walnuts and pulse only till combined. Place small round flat balls on parchment paper in dehydrator for 5-6 hours. Flip half way through.
(or in 200 degree oven for 2-3 hours - check often)

They were good. Very rich, but curbed my chocolate craving.

I did fall into my late night trap of cereal habit. (my weakness, along with chocolate :)) So I had some raw oats with goji berries, a fresh sliced peach, and almond milk.

Raw Diet - Day 1

I thought I would try it out. For those of you who haven't heard about Raw Food Diet - its a diet where you eat uncooked 'raw' food only. No animal products, diary, or bread. Nothing Cooked! :(
Ya- Hard core!! People swear it makes you feel amazing and it is SOOO good for you!
To be honest, I think it's sorta crazy.
But I do think trying it out for a little while isn't bad. It refocuses your diet, get's you back on track, and you can learn some amazing new recipes that incorporate more 'good for you' food! So I don't know how long I will last - but I'm gonna give it a try. :)

Breakfast: Green Smoothie
(this is typical for me) (except mine are purple from the blueberries :))

2 C Spinach
1/2 C Frozen Blueberries
1/2- 1 Banana (frozen if possible)
1/2 C Almond Milk
3/4 Scoop Chocolate Plant Protein
(love this Brand:)

Snack:
Ants on a log with Almond Butter! YUM
And an Apple

Lunch: Broccoli/Peach Salad
Adapted from HERE

Chop up the following:
1 C Broccoli
1/4 C Red onion
1 Peach
1/2 Avocado
Couple Blueberries
Slivered Almonds (optional)
Raisins
Sprinkle with Balsamic Vinegar and Salt and Pepper

YUM!

-I actually really enjoyed this salad! It's different from the norm.

Afternoon Snack:Cookie Dough Bites
YUCK! It was something that sounded good. Cashews, oats, and honey. I think my cashews were rancid. Ugh!

Also, Lots of Fruit and nut trail mix!

Dinner: Broccoli Un-Stir Fry
Recipe found HERE

-I actually LOVED it! Should have chosen something besides Broccoli again. But It tasted so different from another salad. I felt satisfied. Surprisingly!

Dessert: Watermelon Sorbet
- DiViNe!

2 C Frozen Cubed Watermelon
1/2 Frozen Chopped Banana
1-2 tsp Lime Juice
1/4 tsp Stevia Extract or Honey
1/2 C (or more) Sparkling Water

Add all ingredients and blend. Adjust the consistency of the water to what you want. For sorbet keep it less water, for a yummy Watermelon Lemonade add some more water and a touch more lime. It's great both ways!!!

Ready for this:
Here's the surprising part. Dont know if this is 100% accurate -but its way close!
Calories: 1400
Fat: 42 g
Protein: 49!!   - thats more than my daily goal!!
Note: I don't usually keep track of my calories. I don't believe in that! I just did it to make sure I was getting enough calories and protein on this diet. Pin It
