Homemade Corn Dog Muffins!


  • Easy and Fun for the kids!!! 
  • Lunch or Dinner!
  • I try to do something they will really like once and while. :)



  • Ingredients:
  • 4-6 whole tofu (I use smart dogs) or turkey dogs (your choice)
  • ⅔ cup cornmeal
  • ⅓ cup whole wheat pastry flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp paprika
  • 1 Tbl Stoneground Spicy Mustard
  • a dash of Garlic Powder
  • a dash of Onion Powder
  • ¼ tsp Black Pepper
  • 1 Egg
  • 1/3- ⅔ cup plant-based milk
  • 1 tbsp Sugar

Directions:

1) Oven at 425.

2) Mix dry ingredients first, than incorporate the wet. Add the milk last until you have a creamy, but not too wet consistency. Slice the dogs in thirds, pour a little batter (1 Tbl) into sprayed mini muffin pan. Squish in Dog and then Cover with some more batter. Don't over fill.

3) Bake for about 15-18 minutes. Until lightly browned. Serve with Ketchup and Mustard!
