Whole Grain Pancakes

I have tried seriously probably 10 different kinds of whole grain pancakes. We all LOVE this recipe the best! These are a special treat in our house! I top with fresh fruit, but you can do whatever you like!
Some of our fav toppings: peanut butter and powdered sugar, pure maple syrup and jam (fruit spread), Low Sugar Cinnamon Blueberry Sauce, Fresh Fruit and whipped cream, or if you're really daring -peanut butter, whipped cream, and choco chips! YUM -

Ingredients:

Dry:
1 C White Whole Wheat Pastry Flour
1/2 C Whole Wheat Flour
1 C Stone Ground Cornmeal
1/2 C Wheat Bran, Oat Bran, or Wheat Germ
1/2 tsp Salt
4 tsp Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon
Optional: Chocolate Chips, or chopped walnuts or Pecans

Wet:
2 3/4 C Milk (or Soy Milk)
2 Eggs (or Egg Substitute, or 4 Egg Whites)
1/4 C Apple Butter or Applesauce
1 tsp Vanilla Extract
Optional: Blueberries, Chopped Bananas

Mix all Dry and Wet separately, then combine.
Do not over stir and let sit for 10 minutes.
Cook on skillet or Heat a griddle to 350 for perfect pancakes! ENJOY!
