Sneaky Squash Pasta

Want a pasta dish with no guilt? Try Spaghetti Squash! I know, that just ruined your excitement. This dish is so fresh tasting and makes me love summer and the fresh veggies that come with it. You can eat all you want of this one! My son loved how the squash turned into noodles! If your kids are picky, just puree the sauce before serving.
I tend not to do this, just to try and teach my son to eat it.
But hey - however you can get those veggies down them!


Ingredients:
1 Spaghetti Squash
1 Can Diced Tomatoes
1/2 Onion, chopped
1 Zucchini, chopped
Oregano, to taste
Basil, to taste
Parsley, to taste
Salt, to taste
Chicken breast (or canned chicken for a quicker meal)

Instructions:
1-Put tomatoes, onions, and zucchini in pot. Add spices to taste (I am pretty generous). Bring to boil and then simmer until veggies are done.

2-In the meantime you need to cook the squash. Poke wholes in the skin. Place on cookies sheet and bake at 350 for 1 hour, or microwave until skins are soft and squishy (about 12-15 minutes).
Let cool, slice in half. Dig out seeds and then scape out "squash pasta" with a spoon.

3-In a medium non-stick pan, heat 1 tsp of Olive Oil. Add chicken and cook on both sides until done. (Omit this for a yummy vegetarian option)

To serve: Put squash noodles on the plate, place chicken breast on top, and top with the zucchini/tomato sauce. Sprinkle with parmesan cheese. YUM!

UPDATE: I had some leftovers of this in my fridge this morning. Added it to some scrambled egg whites and threw in a handful of spinach. Top with some parmesan cheese - AMAZING!!!
