This meal is the perfect summer dinner. Light, easy, and fresh.
1 Onion, diced
5 or 6 Shitake mushrooms, cut into small pieces
String beans, a generous handful, trimmed ends and cut into thirds
2 Large stalks of Broccoli, chopped
Slivered Almonds
1 C Quinoa
1-2 T Home Base Sauce (recipe on bottom)
1 - Cook 1 Cup of Quinoa according to directions.
2- Put Home Base Sauce in pan, over medium-high heat.
3- Saute Onions and Mushrooms
4- when Onions soften, add green beans and broccoli
5- Cover and cook on low until crisp tender
6- Turn off heat and add Quinoa to pan.
7 - Toss, Serve with Almonds on top.
Variation: I added some Feta cheese on top and stirred in a handful of raisins for a sweet surprise. Yum!
Note: If your kids arn't huge veggie eaters, try taking the veggie mixture and pureeing it or putting in your blender (you may have to add some water or chicken broth), use that as a sauce over the quinoa. (they will have no idea!)
Home Base Sauce:
1/2 C Olive Oil
Juice of 1 lemon
4-5 Cloves of Garlic, minced
1 Tbl. Fruit Juice sweetened Apricot Jam
1 tsp. Cumin
1 tsp. Italian Seasoning
Sea Salt
-Puree or blend all ingredients. Store in refrigerator and use to saute veggies or cook chicken. Its like having your own seasoned cooking oil!

This is so yummy! Light and fresh. Loved it! And the quinoa was a nice change. I'd never tried it before and it's so much quicker than brown rice, plus it's whole grain. Love that!
