Mexican Nacho Pizza

Who doesn't love a good pizza night???




Roll out a Store bought whole wheat pizza dough (whole foods and Trader Joes have great ones!)

Bake dough at 400 for about 10-12 minutes.
Then Top with Nacho Cheese Sauce and Toppings and place back in oven about 5-7 minutes.

Nacho Cheese Sauce:
1 C Butter Beans, rinsed
1/4 C Salsa (I used chipotle salsa)
2 Cloves Garlic
1/3 C Sunflower Seeds
1/2 tsp Onion Powder
2 tsp Taco Seasoning or Pilarcita's Mexican Seasoning
1/4 C Nutritional Yeast
1/2 tsp Sea Salt
1/4 C Water (or more for a thinner consistency)

Put in Blender or food processor till completely combined.

Toppings:
Sundried Tomatoes, diced
3 Green onions, chopped
A few rings of Red Onion Sliced
1/2 can Black Beans, rinsed
2 Roasted Red Peppers (in the jar)
Tomato Sliced
Black Olives Diced
Top with desired cheese. I used Feta and Goat cheese! YUM!!!

After cheese is melted, add diced Avocado and Cilantro!!
