Cauliflower Pizza Pie

This one was fun! And WAY Yummy!
 I call it Pizza Pie, because its still a soft dough, we had to scoop it out with a pie server. 
It is way soft and cheesy tasting - but flour-less! I love it! 



Ingredients:
1 C Shredded Potato
2 C Shredded Cauliflower
1 Egg
1/2 C Part Skim Mozzarella Cheese
1/2 tsp Fennel
1 1/2 tsp Oregano
2 tsp Parsley
1/2 tsp Garlic Salt

Directions:
1) Place Potato and Cauliflower in food processor (separately) and process into small pieces. Place Cauliflower in a microwave safe bowl, add 1 TBL of water, cover, and cook for 3 minutes in microwave.

 2) Let Cauliflower cool and add the rest of ingredients. Stir to combine and spread on a pre-warmed pizza stone, pizza tray, or cookie sheet.


 3) Bake at 450 for 15-20 minutes. It was hard to tell when it was done. Just when it is SLIGHTLY brown. Take out and add desired toppings. Use a brush to lightly coat crust with Olive Oil. Put back under the BROILER to melt cheese.

Kids love this cheesy yummy pizza!! They are easily fooled :)

  2. no, my toppings usually include (my fav tomato/pizza sauce - which I haven't posted yet. need to) and tons of spinach, tomatoes, sometimes roasted red pepper, and olives. Cheese for the pizza my family eats (they insist!!) Sometimes I crack an egg right onto the spinach and let that cook under the broiler - its AMAZING!

  3. Can you explain the cracking the egg idea a little more in depth please?? I'm super confused!! And make sure you dumb it down a lot, b/c you know how much I cook. :)
