I seem to be 'throwing dinner together' in the summer a lot more than normal! This one is so fast and simple and GREAT for the days you didn't make it to the grocery store. :)
Chopped Veggies: red pepper, zucchini, tomato, spinach
or Frozen Veggies thawed and diced into bite size pieces.
Optional: Ham or Canadian Bacon
1/4 C Low Fat milk
S and P to taste
Part Skim Mozzarella Cheese
Whisk eggs and milk. Add Salt and Pepper. (if your kids want the veggies softer you can quickly saute'). Grease a muffin tin and place egg mixture in tins about 3/4 full. Let kids sprinkle with desired veggie toppings. Sprinkle with cheese.
Place in 350 oven for about 15 minutes.
