Buckwheat Banana Pancakes

Breakfast in Bed!! 
THis is what we made daddy this morning - delish!
 Inspired by something I recently had on a vacation to Santa Barbara. 
My husband even LOVED them! (thats a good sign :))



Ingredients:
Dry:
1 C White Whole Wheat Flour (or 2/3 wheat and 1/3 all purpose)
1/2 C Buckwheat Flour (or cornmeal or oat flour (oats ground up))
2 Tbl Wheat Germ
2 tsp Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt

Wet:
1 C Buttermilk (or 1 Cup of milk with 1 Tbl of Lemon Juice - let sit 10 minutes)
1/4 C Almond milk (or skim milk)
1 Egg White
1 Egg
1 Tbl Oil (for less fat use pumpkin puree)
1/2 tsp Vanilla
1/2 C Chopped Walnuts
1-2 bananas thinly sliced

Combine wet and dry ingredients separately. Whip the wet ingredients until bubbly and slightly frothy. Add to dry and ingredients and stir just until combined. 
Pour 1/4 C batter onto hot griddle. 
Cover with a thin layer of sliced bananas, and a little batter on top:


(optional: sprinkle bananas with a little wheat germ)
When edges start to firm up and there are bubbles, flip.

Enjoy with Almond or Peanut Butter and a small amount of Pure Maple Syrup!
