Anyone going camping for the holiday?
We did a few weeks ago. I wanted to make foil dinners (Hobo Dinners - is what I called them growing up). Hubby is used to the nasty version - sausage, and cream of mushroom soup! Well it might not be nasty, but you might as well go buy a big mac! Sick!
So I made a few 'gourmet' dinners for our camping trip.
They were WAY good!
So be creative and have some fun this weekend!

GREEK CHICKEN
Ingredients:
1/2 CHicken breast
3-4 Red Potatoes
1 C Broccoli (fresh or frozen)
Crumbled Feta
Balsamic Vinegar Splash
2 Tbl Minced Fresh Parsley
1 Clove Garlic Minced
Zest of 1 lemon
MEXICALI
Ingredients:
Handful of Lean Hamburger Meat
1/2 C Cooked/Canned Black Beans
Red Onion Sliced
Grape Tomatoes
Corn (fresh if possible- or canned creamed corn for picky hubby's :))
3 Tbl Diced Cilantro
2 Tbl Minced Chilies in Adobo Sauce
1 Tbl Sliced Green Onion
1 Clove Garlic Minced
Optional: Part skim Mozzarella cheese on top
For both dinners we double wrapped , labeled with names, and placed in the hot coals for about 45 minutes!
They were SOO good!!
(the mountains do make everything taste better though :))
