Given to me by a friend a while ago,
these are one of those recipes that I do repeat. (I only have a handful or so)
But this one is so easy, fast, and everyone likes them. Eat them like a regular hamburger with tomato, lettuce, avocado!, or even saute'd mushrooms (my husbands favorite).
ENJOY!
Ingredients:
1 can black beans rinsed
2 green onions thinly chopped
⅓ C chopped red bell pepper
1 tbs. chopped fresh cilantro
¾ C dried plain bed crumbs (or whole wheat bread crumbs)
2 cloves garlic, minced
2 tbs salsa
1 tbs lime juice
S&P to taste
⅛ tsp cumin
2 tbs cornmeal
2 tbs canola oil
4 whole wheat buns
1. Measure ½ C black beans and set aside. Place remaining beans in food processor and puree. Add green onions, red peppers, cilantro, bread crumbs, garlic, salsa, lime juice, and S&P to taste. Process until well combined. Remove to another bowl and add rest of beans. Form into 4 or 5 patties.
2. In shallow bowl mix cornmeal and cumin. Dredge patties in mixture. Heat 1 tbs oil in pan and saute burgers. Until golden and slightly crispy.
